RECIPE: LEMON CURD SLICES
One of my family’s favorite springtime desserts are Lemon Curd Slices. The blend of buttery shortbread and bright, refreshing lemon make this treat little bites of perfection! Bonus: they’re super easy to make. Give them a whirl and tell me what you think.
Makes 12 bars
INGREDIENTS:
Lemon curd slice base
250 g / 8.8 oz plain flour
75g / 2.6 oz icing sugar
180g / 6.4 oz chilled butter
1 egg yolk
2 tablespoon cold milk
500g / 17.6 oz lemon curd
Crumble top
50g / 1.8 oz plain flour
60g / 2.2 oz almond meal
35g / 1.2 oz caster sugar
50g / 1.8 oz chilled butter
1 egg yolk
INSTRUCTIONS:
Lemon curd base
1. Sift flour and icing sugar into large mixing bowl.
2. Whisk to combine
3. Rub in butter to resemble bread crumbs
4. Add yolk and milk
5. Knead until the ingredients comes together into a ball
6. Line baking pan with greaseproof paper and roll the dough to fit into a 20cm by 20 cm pan
7. Chill for 30 minutes.
8. Preheat the oven to 180C
9. Prick the base with fork
10. Bake for 25 minutes and leave it to cool.
11. Second stage after the base has cooled completely, spread lemon curd
12. Top with crumble mixture (see section below)
13. Bake for another 25-30 minutes.
14. Cool completely in the pan
15. Dust with icing sugar before serving
Crumble top
1. Add almond meal, flour, sugar and butter in a mixing bowl
2. Rub together with your fingertips until the mixture resembles coarse crumbs
3. Stir in yolk and set aside in the fridge until required.
